Upside Down Pizza Chaat is a fusion recipe that is perfect to serve as an appetizer for any occasion. I plan to serve these for Holi Celebrations. You will need minimum ingredients and these turn out super crunchy and delicious. I can’t imagine celebrating Holi without chaats and this type of chaat has my heart. The melted Amul cheese layered with Aloo stuffing and then topped with puff pastry are baked in the oven till it becomes crispy. You take out of the oven and then top it with chutneys and sev and enjoy the fusion recipe.

Chaat typically incorporates a diverse range of ingredients such as potatoes, chickpeas, spices, chutneys, and crunchy toppings like sev (crispy noodles made from chickpea flour).
The fusion of chaat with elements of Western cuisine, such as pizza, reflects the evolving tastes and preferences of modern consumers.
How to make Upside down Pizza Chaat?
Potato Stuffing:
Start by boiling potatoes until they’re soft. In a pan over medium heat, heat oil and add crushed coriander seeds and cumin seeds, letting them sizzle.
Mix in green chili paste, boiled potatoes, and green peas, mashing them together.
Then, add amchoor powder, red chili powder, garam masala, cumin powder, and fennel powder, ensuring thorough mixing. Crush kasoori methi over the mixture, add chopped cilantro, and combine well.
Upside Down Pizza:
Begin by thawing a puff pastry sheet overnight in the fridge or for an hour at room temperature. Preheat the oven to 365°F (185°C) and line a baking tray with parchment paper.
Shred 1 cube of Amul cheese and spread it evenly on the parchment paper. Layer the cheese with the prepared potato filling and cover it with a kawan paratha or puff pastry sheet.
Seal the edges with a fork and sprinkle kalonji or nigella seeds over the puff pastry. Bake for 22 minutes or until golden brown. Once baked, remove from the oven and flip the pizza upside down.

Ingredients
Potato Stuffing
- 2 potatoes boiled
- 2 tablespoon oil
- 1/2 cup boiled peas
- 1 and 1/2 tsp red chili powder
- 1/2 tsp crushed coriander seeds
- 1 tsp green chili paste
- 1 tablespoon ginger paste
- 1 tsp gramam masala powder
- 1 and 1/2 tsp amchoor powder
- 1 tsp cumin powder
- 1/2 tsp fennel powder
- Salt as needed
- 1/2 tsp kasoori methi
- 1 tablespoon chopped cilantro
Pizza
- 2 flakey kawan parathas or 2 puff pastry sheets thawed overnight
- 1 tablespoon olive oil
- 2 cubes amul cheese
- 1 tsp nigella seeds kalonji seeds
Chaat
- 2 tablespoon cilantro chili chutney
- 1 tablespoon garlic chutney
- 2 tablespoon dates tamarind chutney
- 1/4 cup thin sev
- 2 tablespoon chopped cilantro
Instructions
Potato Stuffing
- Boil the potatoes and have them ready
- In a pan on medium heat add oil, then add crushed corrianed seeds and cumin seeds and let it sizzle
- Add green chili paste, boiled potatoes and green peas and mash it all together
- Add amchoor powder, red chili powder, garam masala, cumin powder and fennel powder and then mix and mash everything together
- Using your hands crush kasoori methi over the mixture and then add chopped cilantro and mix it all together
Upside Down Pizza
- Thaw the puff pastry sheet overnight in fridge or at room temperature for an hour
- Preheat the oven to 365 degree Fahrenheit
- Layer the tray with parchment paper
- Shred 1 cube of Amul cheese
- Top the cheese layer with Potato filling
- Layer the Aloo and cheese filling with a kawan paratha or Puff Pastry sheet
- Using a fork press down the edges and seal the edge
- Spring the puff pastry sheet with kalonji or nigella seeds
- One the oven is preheated bake it in the oven for 22 minutes or till golden brown
- Take the pizza out and flip it upside down with the cheese layer facing the top
Pizza Chaat
- Cut the pizza in to pieces
- Layer the pizza with chutneys and thin sev
- Garnish with chopped cilantro and enjoy
