Cucumber Mint Raita

When you are craving something refreshing and cooling, you must try this Raita. The crunch in the cucumber and creamy yogurt is perfect for snacking or to pair with parathas. Its so easy to make it and this one has no onion or garlic so its perfect to make when you are fasting.

Ingredients
  

  • 1 cup chopped cucumber
  • 2 cups fat free Greek yogurt
  • Salt as needed
  • 2 green chilies
  • 1/2 cup cilantro
  • 1/2 cup mint leaves
  • 1/2 tsp black salt
  • 1 tsp roasted cumin powder

Instructions
 

  • Whisk yogurt and keep aside
  • In a grinder, add mint leaves, cilantro leaves, green chilies, and 1/4 cup yogurt and form a chutney
  • Add the chutney to the yogurt along with salt, black salt and roasted cumin powder
  • Add chopped cucumber and mix everything well
  • Garnish with cucumber pieces and mint leaves and serve it cold
