Ingredients

For the Paneer Bhurji Filling:


1 cup grated paneer
Salt, as needed
¼ cup chopped bell peppers
¼ cup chopped onions
½ cup chopped tomatoes
1 clove garlic, shredded
1 green chili, chopped
½ cup chopped cilantro
¼ tsp cumin seeds
1 pinch asafetida2 tbsp butter
1 tbsp oil
½ tsp turmeric powder
1 tsp red chili powder
¼ tsp garam masala

For the Sandwich:


4 slices of bread
1 tbsp cilantro chutney

Equipment Needed


Pan or skillet
Spatula
Knife & chopping board
Sandwich maker or tawa

How to Make Paneer Bhurji Sandwiches

  1. Heat oil and 1 tablespoon butter in a pan over medium heat.
  2. Add cumin seeds and asafetida. Let them sizzle until aromatic.
  3. Add garlic and green chili, sauté briefly, then add onions and cook until soft.
  4. Add bell peppers and tomatoes. Cook until the tomatoes soften and the mixture comes together.
  5. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
  6. Add grated paneer and gently combine. Cook for 2–3 minutes.
  7. Turn off the heat and mix in chopped cilantro.
  8. Spread butter on bread slices and apply cilantro chutney if using.
  9. Place the paneer mixture on one slice and cover with another.
  10. Toast on a pan or sandwich maker with remaining butter until golden and crisp.
  11. Cut into triangles or small bite-sized pieces and serve warm.

Storage


The paneer bhurji filling can be stored in the refrigerator for up to 2 days. Assemble and toast sandwiches fresh for best taste and texture.
