Paneer Bhurji Sandwiches

Mom used to make these whenever friends came over, and now I love serving them bite-sized at tea parties, kitty parties, or as easy appetizers. They’re filling, delicious, and even perfect for school lunch boxes

Ingredients
  

  • 1 cup grated paneer
  • Salt as needed
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped onions
  • 1/2 cup chopped tomatoes
  • 1 clove garlic shredded
  • 1 green chili chopped
  • 1/2 cup chopped cilantro
  • 1/4 tsp cumins seeds
  • 1 pinch asafetida powder
  • 2 tablespoon Amul butter
  • 1 tablespoon oil
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/4 tsp garam masala
  • 4 slices of bread
  • 1 tablespoon cilantro chutney to serve

Instructions
 

  • Place a pan on medium heat and add oil along with 1 tablespoon of butter. Let it melt.
  • Add cumin seeds and a pinch of asafetida. Let them sizzle for a few seconds until fragrant.
  • Add chopped garlic and green chili, sauté briefly, then add onions. Cook until soft and slightly translucent.
  • Add chopped bell peppers and tomatoes. Cook for a few minutes until the tomatoes soften and everything blends well.
  • Add turmeric powder, red chili powder, garam masala, and salt. Mix well so the spices are evenly combined.
  • Add the grated paneer and gently mix. Cook for 2–3 minutes to bring everything together.
  • Turn off the heat and mix in chopped cilantro.
  • Spread butter on one side of each bread slice
  • Place the paneer mixture on one slice and cover with another slice.
  • Toast on a pan or sandwich maker with remaining or you can serve by itself
  • Cut into triangles or small bite-sized pieces and serve warm.
