Sukha Bhel

Bhel Puri is one of the most popular Indian street food. This snack is served at beach side, bus stops and train stations in India. We have grown up eating different versions of Bhel in Mumbai especially on Chowpatty and Juhu Beach. Although we love all of them, Sukha Bhel holds a special place for some people like my husband who demands to eat it twice a week.
The Sukha Bhel chutney makes a huge difference when you are making this version of Bhel. Since there is no wet chutneys in this bhel, it stays super crunchy and gives bursts of textures and flavors. You can modify this bhel based on your taste. We love it spicy and tangy so we add lots of green chilies and lime juice. I promise this Bhel will remind you of India.
Bhel is completely vegan and can be modified for jain foodies by subtracting the onions and potatoes. Some people like to add chopped cucumber and peanuts to the bhel. You have lot of room to play around with the textures.

Ingredients
  

  • 2 cups puffed rice/ basmati mamra roasted
  • 1 tablespoon olive oil
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped red onions
  • 1/2 cup chopped raw mango
  • 1 tsp finely chopped green chillies optional
  • 1/4 cup boiled potatoes diced into small pieces
  • 1/2 cup fried chana dal
  • 3-4 whole wheat puris sev puri version crushed
  • 3/4 cup thin sev
  • 1 cup finely chopped cilantro
  • 1 tablespoon chaat masala
  • 2-3 tablespoon sukhi Bhel chutney modify as per taste
  • salt as needed
  • 2 tablespoon freshly squeezed lime juice

Instructions
 

  • Roast the mamra in oil on low heat till they are crunchy (do not add anything to mamra)
  • Chop all veggies and have all ingredients ready before assembling
  • In a wide bowl mix mamra, 1/4 cup chana dal, 3-4 crushed puris, 1/2 cup sev, salt and chaat masala and mix it well
  • Add potatoes, onions, cilantro, tomatoes, green chilies, 1/4 cup raw mango
  • Sprinkle the sukhi Bhel chutney and squeeze lime juice and mix everything well
  • Garnish with additional sev, chana dal, cilantro, raw mango
  • Place 2 puris on top and serve immediately
