Introducing Hariyali Sama Rice Khichdi

Samak chawal or vrat ke chawal that are also called Banyard millets are one of favorites and I love to make Khichdi or pulao using it. Rather than eating same old classic Khichdi here is an interesting spin to it. Today I am sharing  a one pot recipe for Hariyali Millet Khichdi also called Moraiyo that can be quickly made in an instant pot. The Khichdi get cooked in less than 10 minutes while you make the Hariyali chutney. The combination of the two with a dollop of ghee is just so good and trust me it was ultimate comfort. We enjoyed biting on peanuts and potatoes and the soft and gooey Khichdi with the spicy twist. You can make this for navratri, upvaas, vrat, ekadashi or even when craving for healthy meal.

Dish History of Hariyali Sama Rice Khichdi

Hariyali Sama Rice Khichdi, also known as Green Millet Khichdi or Farali Khichdi, is a dish that comes from India, especially Gujarat. It’s often eaten during fasting times when people avoid certain foods.

The main ingredient in this dish is Sama rice, a small, white grain that’s good for fasting because it’s easy to digest and full of nutrients. To make the khichdi, we cook the Sama rice with green chilies, cilantro, mint, and other green herbs. These ingredients not only add flavor but also make the dish healthy.

How to make Hariyali Sama Rice Khichdi?

Prepare the Sama Rice: Begin by washing the Sama rice or millet rice thoroughly under running water to remove any dirt or impurities. Then, soak the rice in water for about 15-20 minutes. This helps to soften the rice before cooking.

Saute in Instant Pot: Turn on your Instant Pot and select the saute mode. Once the pot is hot, add raw peanuts and cumin seeds. Let them sizzle for a few seconds until they start to release their aroma.

Add Aromatics and Potatoes: To the pot, add curry leaves, green chili paste, and diced potatoes. Stir everything together to coat the potatoes with the aromatic spices.

Incorporate Sama Rice: Drain the soaked Sama rice and add it to the Instant Pot. Mix everything together for a few seconds to allow the rice to absorb the flavors of the spices.

Add Water and Salt: Pour in the appropriate amount of water according to your desired consistency of the khichdi. Add salt to taste. Give everything a good stir to ensure that the salt is evenly distributed.

Pressure Cook: Cancel the saute mode on the Instant Pot. Close the lid and set the Instant Pot to cook on high pressure for 10 minutes. Once the cooking time is up, allow the pressure to release naturally.

Prepare Hariyali Chutney: While the khichdi is cooking, prepare the Hariyali chutney. In a blender or food processor, grind together peanuts, salt, lime juice, green chilies, cilantro, and yogurt until you get a smooth and creamy consistency.

Mix Chutney with Khichdi: Once the khichdi is cooked and the pressure has released, open the Instant Pot lid. Add the prepared Hariyali chutney to the khichdi and mix everything well to combine. Adjust the seasoning if needed.

Garnish and Serve: Garnish the Hariyali Sama Rice Khichdi with chopped cilantro and a drizzle of ghee for added flavor. Serve hot and enjoy it as a delicious and nutritious meal, perfect for fasting days or any occasion.

Equipment needed:

  • Instant Pot or Pressure Cooker: You’ll need a special pot that can cook food quickly under pressure. It’s like a magical pot that can make cooking faster and easier.
  • Blender or Food Processor: You’ll use a machine to make the green chutney. It helps to chop and mix ingredients like peanuts, green chilies, and cilantro into a yummy paste.

Storage:

  • Cool it Down: If you have leftovers, let the khichdi cool down first. Don’t put it hot into the fridge or freezer.
  • Put it in a Container: Once it’s cooled, transfer the khichdi into a container that closes tightly. This keeps it fresh.
  • Fridge or Freezer: If you want to eat it within a few days, put it in the fridge. If you want to keep it longer, like for a few weeks, you can freeze it.
  • Thawing and Heating: When you’re ready to eat it, you can defrost it in the fridge overnight or use the microwave. Then, heat it up in the microwave or on the stove until it’s warm all the way through.

Serving suggestions:

  1. Yogurt or Raita: You can eat the khichdi with some plain yogurt or cucumber raita. It cools down the spices and makes it creamy.
  2. Pickle or Chutney: Have some pickle or chutney on the side. They’re tangy and add extra flavor to the khichdi.
  3. Papad: Crispy papad is great to eat with khichdi. You can roast or fry it and have it crunchy with the khichdi.
  4. Fresh Salad: Make a simple salad with cucumber, tomato, and onion. Squeeze some lemon on top and eat it with the khichdi for freshness.
  5. Ghee or Clarified Butter: Put a little ghee on top of the hot khichdi before eating. It makes it richer and tastier.

Expert Tips:

  • Soak the Rice: Before cooking, soak the Sama rice in water for about 15-20 minutes. This helps it cook better.
  • Use Fresh Ingredients: Use fresh herbs and spices for better flavor. Fresh cilantro, mint, and green chilies work best.
  • Toast Spices: Cook cumin seeds and peanuts in oil or ghee until they smell nice. This adds more flavor to the khichdi.
  • Release Pressure Naturally: After cooking, let the pressure release naturally. This helps the rice soak up any extra moisture and become fluffy.

Hariyali Sama Rice Khichdi

Hariyali Samak khichdi is a twist to traditional Samak ke chawal ki khichdi. The vibrant green color from green chilies and cilantro adds to much depth to the normal Vrat ke chawal ki khichdi We like to enjoy it with ghee and yogurt. Once you take a bite of one, you will keep on eating it till you lick the bowl. Millets are so healthy and also wholesome and perfect for a meal.
