Introducing Guacamole Chickpea Sandwich

Guacamole Chickpea Sandwich is one of our go to for summer. Be it picnic or lunch boxes, this no cooking required sandwich is perfect for hot summer days. It is light and healthy. I love the fact that chickpeas add protein and avocado add good fats. My kid loves this sandwich. We make these ahead of time and take them for picnics as well. Every bite is soft and delicious.

The Guacamole Chickpea Sandwich is more than just a meal; it’s a celebration of flavors and textures that come together between two slices of toasted bread. Whether enjoyed as a quick lunch or a light dinner, this sandwich is sure to leave you craving for more. With its combination of creamy avocado, hearty chickpeas, and vibrant flavors, the Guacamole Chickpea Sandwich is a true delight for the senses, offering a satisfying and wholesome meal that’s both delicious and nutritious.

How to make?

Soak and Cook Chickpeas: First, measure the amount of dried chickpeas you want and put them in a big bowl. Cover them with water and leave them overnight. The next day, drain the water and rinse the chickpeas. Then, put them in a pot with fresh water and some salt. Bring it to a boil, then let it simmer until the chickpeas are soft or pressure cook them.

Mash the Avocado and Chickpeas Together: While the chickpeas are cooking, it’s time to prepare the avocado. Slice the avocados in half and remove the pits. Scoop out the creamy flesh into a large mixing bowl. Once the chickpeas are cooked and cooled slightly, add them to the bowl with the avocado. Use a fork or potato masher to mash the avocado and chickpeas together until you achieve a creamy consistency with some texture from the chickpeas.

Add Tomatoes, Onions, Jalapeños, and Cilantro: Prepare the remaining ingredients for the guacamole filling. Finely dice the tomatoes, onions, and jalapeños, ensuring they are all roughly the same size for even distribution of flavor. Chop the fresh cilantro leaves finely. Add all of these ingredients to the bowl with the mashed avocado and chickpeas.

Mix in Salt, Black Pepper, and Lime Juice: Season the guacamole mixture to taste with salt and freshly ground black pepper. Squeeze fresh lime juice over the mixture to add a bright, tangy flavor that will enhance the overall taste of the sandwich. Use a spoon or spatula to mix everything together thoroughly, ensuring that all the ingredients are evenly incorporated.

Assemble the Sandwich: Once the guacamole filling is ready, it’s time to assemble the sandwiches. Take two slices of your favorite bread and place a generous amount of the guacamole mixture onto one slice. Spread it evenly to the edges of the bread. Place the other slice of bread on top to form a sandwich.

Cut and Wrap: Using a sharp knife, carefully cut the sandwich in half diagonally to create two triangular halves. If you’re not planning to eat the sandwiches right away, you can wrap each half individually in plastic wrap or aluminum foil to keep them fresh for later. Otherwise, serve and enjoy your delicious Guacamole Chickpea Sandwiches immediately!

  • Refrigerate: If you’re not eating the sandwiches right away, put them in the fridge. Store them in an airtight container or wrap them in plastic wrap.
  • Short-Term: If you’ll eat them within a day, just refrigerate them. They’ll stay good for a short while in the fridge.
  • Longer Storage: For longer storage, wrap each half of the sandwich in plastic wrap or foil. This keeps them fresh for a few days.
  • Avoid Moisture: Make sure the sandwiches don’t get wet. Moisture can make the bread soggy, so keep them dry.
  • On-the-Go: If you’re taking the sandwiches with you, use a container or wrap them tightly. This keeps them from getting squished.

Serving suggestions:

  • Pickle or Chutney: Have some pickle or chutney on the side. They’re tangy and add extra flavor to the sandwich.
  • Fresh Salad: Make a simple salad with cucumber, tomato, and onion. Squeeze some lemon on top and eat it with the sandwich for freshness.
  • Dips: Serve your sandwich with a variety of dips for dipping or spreading. Hummus, salsa, guacamole, or tzatziki are all delicious options that add extra flavor and creaminess to your meal.

  • Adjust Spiciness: If you like spicy food, add more jalapeños. If you prefer it milder, use less or skip them altogether.
  • Try Different Spices: Don’t be afraid to experiment with spices like cumin or paprika to give your filling a unique flavor.
  • Use Ripe Avocados: Make sure your avocados are ripe but not too mushy. They should feel slightly soft when gently squeezed.
  • Keep Guacamole Fresh: To prevent browning, store guacamole with the avocado pits or add extra lime juice on top.

Guacamole Chickpea Sandwich

If you were to ask my what is my go to meal then I would say a good sandwich that is hearty and easy to make. Vegan Guacamole Chickpeas Sandwich made it to my favorite list recently. I made this once as I had left over guacamole, by the way this was a great way to repurpose it and since then it’s has been added to our weekly menu. Both my husband and I thought this tasted so delicious as it has all the flavors in it. The crunch from onions and cilantro, the mushiness from avocado and the bite from chickpeas in between soft bread tastes like heaven in the mouth. The jalapeños add the right amount of spice to this sandwich. Bonus points for covering all the food groups and fitting it into your diet.

Ingredients
  

  • 1 cup cooked chickpeas with salt added
  • 1 avocado
  • 1/4 cup chopped onions
  • 1/4 cup diced jalapeños adjust if needed
  • 2 tablespoon lime juice
  • 1/4 cup cup chopped tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 tsp black pepper
  • Salt as needed
  • 1 clove of garlic options
  • 4 slices of whole wheat bread

Instructions
 

  • Soak the Chickpeas overnight and cook them with salt
  • Mash the Avocado and Chickpea together
  • Add tomatoes, onions, jalapeños, cilantro and mash everything together
  • Add salt, black pepper and lime juice and mix it well
  • Place the filling between 2 breads and form a sandwich and cut in 1/2 and you can wrap it in saran wrap for later
