Dish History:

The journey of Zucchini and Paneer Waffles began with a culinary enthusiast’s exploration of diverse cuisines, seeking to merge the goodness of zucchini and the richness of paneer in a format that goes beyond conventional recipes. The goal was to create a dish that not only satisfies the taste buds but also offers a novel and visually appealing presentation.

How to make Zucchini and Paneer Waffles?

  1. Shred the Zucchini and add 1 tsp salt to it and leave it for 10 minutes
  2. Drain and squeeze the water out of the Zucchini
  3. Add chopped cilantro and shredded paneer
  4. Add red chili powder, turmeric powder, amchoor powder and salt only if needed
  5. Add the rice flour and mix it well to form a thick batter (the longer the batter sits you may need more rice flour)
  6. Grease the waffle maker with oil
  7. Spread the batter on the waffle maker and cook for 10 minutes
  8. Flip it mid way and cook on the other side
  9. Garnish with chopped cilantro and serve it along with Dill and Pepper Dip

Equipment needed:

Mixing Bowl, waffle maker.

Storage:

For short-term storage, you can refrigerate the waffles. Place them in an airtight container or wrap them tightly with plastic wrap. This helps retain moisture and prevents them from drying out.

Serving suggestions:

Serve the waffles with a cooling yogurt sauce. Mix yogurt with chopped mint, cilantro, a pinch of salt, and a squeeze of lemon for a refreshing accompaniment. Explore different chutneys for a burst of Indian flavors. Mint chutney, tamarind chutney, or a spicy tomato chutney can be excellent choices.

Alternative ingredients:

Experiment with various herbs to enhance the flavor profile. Try dill, parsley, basil, or mint for a fresh and aromatic twist. Instead of or in addition to rice flour, try using chickpea flour (besan), almond flour, or whole wheat flour for added nuttiness and nutritional value.

Expert Tips:

Ensure that you pat dry the shredded zucchini after draining and squeezing to remove excess moisture thoroughly. This helps in achieving a crispier waffle.
