Kakdi nu Shaak is a simple gujarati curry which is our go to when we run out of veggies. We always have Cucumber handy as we make salads or katchumber or add it to sandwiches. When I was growing up, whenever mom ran out of veggies she would make Kakdi nu Shaak. This was a shaak that everyone in our family thoroughly enjoyed. Cucumber tossed together with spices and cooked in a way where it retains its crunch is perfect way to enjoy them. It is flavorful and contains no onion of garlic. It’s perfect for summer as it is cooling. Once you try this shaak you will want to make it again and again.
Recipe
Kakdi Nu Shak | Cucumber Sabzi
Ingredients
- 2 large Cucumbers diced into pieces
- Salt as needed
- 1 tablespoon olive oil
- 1/2 tsp mustard seeds
- 1/4 tsp asafetida powder
- 1/2 tsp cumin coriander powder
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1 tablespoon lime juice
- 1/4 cup chopped cilantro
Instructions
- Wash and dice cucumbers into big pieces, can remove the peel if desired
- In a flat pan heat oil on medium heat
- Once the oil is hot, add the mustard seeds and asafetida powder and let it sizzle
- Once the mustard seeds sizzle, add the cucumber pieces and mix it well
- Add salt, red chili powder, turmeric powder and cumin corriander powder and mix it well and let the water evaporate
- Drizzle lime juice and Garnish it with chopped cilantro
- Serve hot along with Rotli, Thepla, Bhakri or Parathas
