Introduction

Beet and Chickpeas Croquettes are crispy from outside and soft and gooey from inside. The chickpeas add a filling texture and the beets adds the sweetness and gives it a bright pink or red color. These are packed with protein, fiber and are extremely healthy,. You can enjoy them as a snack or serve them as an appetizer. 

Croquettes are deep fried round snack made with meat or vegetable along with bread crumbs. On our last trip to Italy, we had variety of croquettes and I wanted to remake a healthier version in my kitchen. I am sharing a Chickpeas and Beet croquette recipe that is air fried. These are high in protein as it contains chickpeas and the beets adds the bright dark pink color. They turn out crunchy and are perfect for snacking or school lunches. 

Dish History

Croquette is a deep fried ball or roll made with meat, wheat, vegetables and breadcrumbs. Croquettes originated in Europe and it was initially made using leftover food. It is crispy from outside and soft and mushy from inside. There are versions of croquettes such as arancini that is made with rice, tater tots that is made with potatoes and cheese croquettes. 

In this recipe we will be making healthier version of croquettes by air frying them or making them in an app pan and we are packing ours with protein by using chickpeas. 

How to make Beet and Chickpeas Croquettes ?

Boil chickpeas and beets for 20 minutes on high pressure 

Once the chickpeas are mushy, drain all the water out

Mash the chickpeas and beets together 

Add salt, green chilies, shredded garlic, baking soda and cilantro and mix it well 

Add the bread crumbs as needed to absorb the water 

Form equal portion balls and roll it in bread crumbs before placing it in an Air Fryer 

Preheat the air fryer to 400 degrees and place the croquettes in the air fryer spraying oil on each side 

Preheat for 20 minutes or till brown on all sides 

If using appe pan, heat the appe pan on medium heat. Place the croquettes in the appe pan and cook them till crispy on all sides 

Serve it along with jalapeño crema sauce 

 

Airfried Beet and Chickpeas Croquettes

This crunchy and healthy croquettes can be easily made in 20 minutes. They taste so delicious and once you take a bite of one you will not stop. It is kid friendly and can be perfect recipe to send over to school lunches.

Ingredients
  

  • 1 cup dry chickpeas
  • 1/2 cup beets
  • Salt as needed
  • 1 green chili chopped
  • 1 garlic clove shredded
  • 1/4 cup chopped cilantro
  • 1 pinch baking soda
  • 1/2 cup bread crumbs
  • 2 tablespoon olive oil spray

Equipment needed:

Mixing bowl, Air fryer / Paniyaram pan 

Storage: 

Room temperature for 3-4 hours. Reheat to bring the crunch back.

Serving suggestions:  

Serve it along with jalapeño crema sauce or tomato ketchup 

Alternative ingredients: 

You can use gluten free bread crumbs to make  it gluten free. You can use semolina instead of bread crumbs. To make this healthy you can use soy flour. 

Expert Tips: 

After 10 minutes of air frying, flip them so they can cook evenly on all sides. If the mixture is too dry add little bit of water to help bind them.
