Bell Peppers are staple in my refrigerator. I like to buy variety of them as they are high in vitamin C. I make a jar of Roasted Red Peppers and store them so I can add them to our meals during  the week. Whenever I have leftover peppers that won’t get use I make this creamy and delicious Roasted Red Pepper Aioli. It’s a perfect sauce to add on to Tacos, Sandwiches, Wraps and Salads. The sauce is smooth and creamy and it adds so much flavor to many dishes. It comes together in 5 minutes if you have roasted red pepper handy. 

Roasted Red Pepper Aioli (Vegan)

Roasted Red Pepper Aioli is a versatile sauce, you can add it to tacos, burgers sandwiches, salads or pair it along with so many things. I usually make a jar and store in my refrigerator  easy weeknight meals. This sauce is vegan and requires minimum ingredients. The texture is smooth and creamy and it tastes so delicious. 
Prep Time 10 minutes
Course condiment
Cuisine chutney
Servings 1 cup

Ingredients
  

  • 1 cup vegan mayo
  • 2 cloves of garlic
  • 1 cup roasted red pepper
  • Salt as needed
  • 1/2 tsp black pepper powder
  • 1/2 tsp chili flakes
  • 1 tsp lime juice

Instructions
 

  • Blend together all the above ingredients in a food processor
  • Store the sauce in an airtight container in refrigerator for 7-10days
