No Basil Vegan Pesto Sauce
I find Pesto sauce versatile, it can be used with sandwiches, pasta and salads. My husband does not like the Basil Pesto sauce as it is too pungent for him so I have a recipe of No Basil Pesto sauce. Its also hard to find a store bought pesto sauce that is vegan so here I have an easy recipe of vegan version. I added extra jalapenos to make it a little spicy but you can subtract that if you prefer it mild. I have been using this recipe for a decade and it has always been a crowd pleaser. This recipe has been shared with my friends and family many times. I cant wait to see you guys make this sauce and send me a picture.
Ingredients
- 2 cups spinach
- 2 cups arugula
- 2 cloves garlic
- 1 tablespoon ground black pepper
- salt as needed
- 2 jalapenos (modify per taste)
- 1/4 cup olive oil
- 1 cup walnuts
Instructions
- Lightly toast the walnuts on stove for 5 minutes till they are crunchy and remove from the heat
- Chop the jalapenos in big chunk like pieces
- In a food processor add walnuts, jalapenos, arugula and spinach
- Add salt, pepper powder, garlic cloves and olive oil
- Grind it to a coarse mixture
- Store the sauce in an airtight container in the refrigerator for 1 month
- Use to the sauce with pasta, salad or sandwiches
