When we were visiting Utah, we had no idea if we were going to find lot of vegetarian or vegan food there but we were surprised to find so many options. When we looked up restaurants on google we found limited options and none of them looked appealing. We were recommended 98 Center Moab by a local and we were so glad that we found a gem in Moab. We love fusion food and this restaurant has Vietnamese – Philly fusion food. I had never tried this fusion before so I was super excited about it after speaking to a local. The restaurant serves organic and locally sourced ingredients. 

We went here for lunch and the vibe of the restaurant was casual and happening. There is plenty of outdoor and indoor seating available. 

The restaurant had limited options but everything looked and sounded so interesting. We got Hi-C drink and it was made with  pineapple, orange, hibiscus and sparkling water and it tasted so refreshing. The juices were fresh and the combination worked so well. We ordered their Vegan Bahn Mi Nachos and  I have never tried  this fusion before.  The chips and kimchi were house made. I could taste the pickled daikon, queso fresco and crème fraiche and in my opinion this dish was outstanding. The cripsy nachos with the sour and sweet topping blew my mind. If you visit this restaurant you must try this dish. We also got their vegan Philly Cheesesteak that was served with Vegan Pho. Its very hard to find vegan Pho and this one tasted so good and soothing. The Philly Cheesesteak was made with mushrooms and the bread was super soft and fresh and the flavors of mushroom and cheese tasted so delicious. We are not huge fans of vegan cheese and we could not tell that the cheese was vegan. For dessert we got Big Drop Bar that almost tasted soft and mushy like a Banana bread except this one had no bananas. The bar was made with dates, pecans and coconut and it was gluten free. The sugar balance was so good and even though I was full, I finished an entire bar. 

The service was outstanding. The server was very calm and helped us decide on the menu and she made sure we were happy with what we ordered. If I return to Moab then this place will be on my must visit list.
