Vegan Gajar Halwa

Gajar Halwa is a traditional Indian dessert from north of India. We grew up eating this Halwa during winter times when carrots were in season in India. The carrots in India would be reddish orange color and this Halwa during winter times would be ultimate comfort. The original Halwa has Desi ghee, Milk and Khoya that adds richness to the Halwa. 
I have so many friends and families who are vegan so this Diwali, I am sharing my recipe of a vegan version of this Halwa. When I started making this Halwa, I thought it will miss the richness but to my surprise it tastes just as good as original Halwa. The sugar level is just perfect as I can’t eat mithai that is overly sweet. The nuts adds the perfect crunch. When eaten warm, it tastes so comforting especially on a chilly night. Ingredients
  

  • 4 cups shredded carrots
  • 1 tablespoon plant based butter
  • 1/4 cup chopped nuts
  • 1/2 tsp cardamom powder
  • 6-7 strands of saffron
  • 1 cup sugar
  • 1/2 cup of original almond milk

Instructions
 

  • In a pan on medium heat plan based butter and let heat for few minutes
  • Add carrots and let the carrots cook for 5 minutes
  • Add sugar to the carrots and cook till water evaporates
  • Add milk once water evaporated and cook the mixture till carrots completely soften and milk has been absorbed
  • Add saffron and cardamom powder
  • Sprinkle chopped nuts and mix it well
