Spicy Roasted Beet Hummus
How do you like your hummus? I always prefer mine to be tangy and spicy and that’s how I came up with this recipe. The sweetness from the roasted beets pairs very well with the garbanzo beans. The lime juice adds a tang to this hummus and the jalapeños gives it the right amount of kick. I like to pair mine with Trader Joes crackers and some vegetables.
Ingredients
- 1 medium beet roasted
- 1 can garbanzo beans
- salt as needed
- 2 tsp lime juice
- 2 cloves garlic
- 1 jalapeño
- 1/2 cup olive oil
- water as needed
- sesame seeds to garnish
Instructions
- Coat the beets with olive oil and roast the beets in oven at 400 degrees farenheit for 25 minutes or till they are softened and completely cooked.
- Let the beets cool for some time
- In a food processor grind all the ingredients
- When serving the hummus garnish with olive oil and sesame seeds
