Roasted Tomatoes & Goat Cheese Toast

Let’s begin our Toast series with this delicious and easy Roasted Tomatoes and Goat cheese Toast.  If you haven’t tried Goat cheese and Tomato together then you are missing out. It plays with the  textures, I added few ingredients in the goat cheese to enhance the flavors. This was approved by everyone in the family. I am definitely making this on repeat. 
You can totally use baguette and make crostini instead and serve as an appetizer for your parties. I am sure you will enjoy this on

Ingredients
  

  • 2 sourdough bread
  • 1/2 cup goat cheese
  • Salt as needed
  • 1/2 tsp black pepper powder
  • 1 tablespoon butter
  • 1-2 green chilies chopped optional
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • 1 cup cherry tomatoes cut in half

Instructions
 

  • Preheat oven to 375 degree Fahrenheit
  • After cutting the tomatoes in 1/2 place them in a baking dish. Drizzle 2 tablespoon of olive oil, salt and black pepper powder
  • Mix them and bake them for 15-20 minutes or till they are wilted
  • In a bowl add goat cheese, chopped green chillies and chopped cilantro and 1 tablespoon of olive oil, salt as needed and mix it
  • Apply butter on sourdough bread and toast them on both sides till brown
  • Slather the toasted bread with goat cheese mixture, roasted tomatoes and sprinkle with chopped cilantro and black pepper powder
