Pomegranate Guacamole was introduced to me when I visited a Mexican restaurant in NYC. I am in love how the tangy guacamole flavors worked well with the Pomegranate seeds. It adds a crunch as well as sweetness. The flavors are balanced so well and I am in love with this. I like to serve it as an appetizer along with tortilla chips or serve them on crackers for quick bites. 

How to pick a ripe Avocado?

  1. Look for an Avocado that is dark in color 
  2. Press the top of the Avocado 
  3. If it bounces back up that means it is ripe
  4.  Overly ripe avocados are extra mushy and are soft from all sides
  5. Avocados that are green in color are not ripe but you can leave them in a paper bag for 3-5 days before they turn dark in color
  6. Once the Avocados ripe place them in refrigerator for longer shelf life

Pomegranate Guacamole

Whenever I am hosting a party Guacamole always makes an appearance. It’s easy to make it but the best part is that everyone loves it. It is healthy, contains lots of veggies and is so filling. Pomegranate add a guilt free crunch to all the food. They taste so delicious in chaat and so many dishes. I loved combo of the seeds along with Avocado. It tastes spicy, tangy and sweet. Checkout the recipe below that I am sure you will enjoy.

Course Appetizer, Snack
Cuisine Mexican, mexican fusion
Servings 2 people

Ingredients
  

  • 1/2 cup pomegranate seeds
  • 1 avocado
  • Salt as needed
  • 1 garlic clove chopped
  • 1 jalapeño chopped into small pieces
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped onions
  • 1 tablespoon lime juice
  • 1 tsp black pepper powder

Instructions
 

  • Smash together onions, cilantro, jalapeños and garlic, this will help release the juices
  • Add the Avocado and smash it together till it becomes a uniform mixture and all the avocados are smashed
  • Add salt and pepper and lime juice and mix it well
  • Sprinkle Pomegranate seeds and bring it all together
  • Sprinkle fresh cilantro and serve
  • Place 1 teaspoon on the crackers and then sprinkle additional pomegranate seeds and cilantro and serve
  • You can also serve it with tortilla chips and enjoy
