Paneer Lettuce Cups

I always try to make light meals during the summer that has lots of veggies, protein and is not to heavy or greasy. The combination of paneer and lettuce tastes so good. The soft paneer and crunchy lettuce are match made heaven. To add extra crunch I added shredded carrots, beets and papad chavanu and I was in a food coma.
This dish can be served as an appetizer if you are entertaining. You can make the paneer ahead of time and let your guests assemble the cups when they arrive.
It makes a great low carb or keto friendly option.

Ingredients
  

Dry Masala

  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 4 dry red chilies

Gravy

  • 1/2 bell pepper cut into cubes
  • 1 plum tomato cut into pieces
  • 2 tablespoon yogurt
  • 1 tablespoon oil
  • 4 cloves garlic
  • salt as needed
  • 3 tsp dry masala
  • 1 tablespoon kasoori methi
  • 12-14 square pieces of paneer

Lettuce Cups Assembly

  • 5-6 whole Iceberg Lettuce Leaves washed and dried
  • 2 tablespoon shredded carrots
  • 2 tablespoon shredded beets
  • 1/2 cup papad chavanu (optional)

Instructions
 

Dry Masala

  • Dry Roast all the ingredients for dry masala on low heat till fragrant and then let it cool
  • After 10 minutes, grind everything in a spice grinder

Paneer Gravy

  • Puree the tomatoes, garlic and bell peppers using a blender
  • Heat oil in a pan on medium heat
  • Add the pureed tomato mixture to the pan
  • Cook for 5-10 minutes
  • Add the dry masala and salt and cook for 5 minutes
  • Add yogurt and mix it well
  • Add the paneer to the gravy and let is cook till paneer softens
  • Add kasoori methi and turn off the heat

Assemble the Lettuce Cups

  • Place Lettuce on a plate and make sure they are patted dry
  • Spoon 1-2 tablespoon of paneer mixture on lettuce
  • Garnish with shredded beets, shredded carrots and cilantro
  • Top with Papad Chavanu for added crunch
