Empty your Fridge Soup came about when I had veggies sitting in my fridge that were going bad. This soup turned out so delicious. Beets gives it bright red color. If you are short on time, this soup is perfect as it is one pot meal. I also used the delayed timer so all I needed to do was season and grind it in evening. The paneer adds protein to this soup. You can have this soup when trying to loose weight. It is low in carbs and high in protein.

Empty your Fridge Soup | Mix Veg Soup

There are many weeks when I have lot of veggies sitting in my veggies. Those veggies are either not being used or are about to go bad. Here is a quick and easy one pot recipe for Empty your fridge soup. I threw in all the veggies in an instant pot and then made the most delicious soup. Checkout the recipe below that I am sure you will enjoy

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium sized onion cut into chunks
  • 1 green chili
  • 3 cloves of garlic
  • 1 small piece of ginger
  • 2 cups cauliflower washed and separated
  • 1 medium sized tomato cut into chunks
  • 1 cup carrot cut into large chunks
  • 1 cup beetroot cut into large chunks
  • 1 medium sized potato cut into big pieces
  • 4 cups water
  • Salt as needed
  • 1 tablespoon black pepper powder
  • 1 cup 1 inch paneer cubes
  • 1/2 chopped cilantro

Instructions
 

  • Turn on instant pot on sauté mode and add 1 tsp olive oil
  • Add onions, green chili, garlic and ginger and let it cook for few minutes
  • Add cauliflower, potato, carrots, beets and tomatoes
  • Add 3 cups of water and mix everything well
  • Cancel the sauté mode and put the instant pot on high pressure for 20 minutes, if using pressure cooker then cook it for 3 whistles
  • You can also use delayed timer and set it up to cook later
  • Soak the paneer cubes in warm water for 30 minutes
  • Once the soup is cooked and the pressure is released you can open the lid
  • Using a hand blender, blend the soup and be careful as it may be hot
  • If using grinder, let it cool before grinding it
  • Add 1 cup of water or more if needed for desired consistency
  • Add salt and black pepper powder and mix it well
  • You can leave the soup in a soup/broth mode for it to stay hot
  • Dip the paneer cubes in the soup
  • Sprinkle with chopped cilantro and enjoy it hot
