Ped which is made out of edible gum, ginger powder and long pepper powder tastes so delicious and is nutritious during winter time. I was born and raised in Jain Gujarati family and my Baa ate Ped very often. It helps prevent our body from catching cold of cough and gives our body strength. My grandmother ate 1 tablespoon of Ped during cold days and also after upvaas to help regain the strength. My mom also made Ped for me when I was nursing. The fats in the Ped helps the milk production and gives essential nutrition to the baby.Â
Recipe
Ped | Gundar ni Ped | Edible Gum Halwa
Ingredients
- 5 cups whole milk
- 1 cup whole almonds
- 1 cup whole walnuts
- 1/2 cup gundar edible gum
- 1/2 cup melted ghee
- 3/4 cup ginger powder
- 1 and 1/4 cup sugar
- 1/2 cup ganthoda Peepramil or long pepper powder
- 1/2 cup dry coconut
- 1 tablespoon cardamom powder
- 1/2 tsp kesar
Instructions
- In a food processor grind walnuts and almonds till it is a coarse mixture
- In a deep pan on medium to high heat, add ghee and let it melt
- Add Gundar to the ghee and let it fry till they become crunchy and change the shape
- Add milk to the pan and stir the milk
- After 5 minutes the milk will curdle and form a thick mawa like texture
- Keep on stirring and cooking the milk till it reduces to 1/2 (this process will take about 20-30 minutes)
- Once the milk is reduced to 1/2 add sugar and let it boil till it is reduced to 1/3
- Sprinkle Kesar in the milk mixture and mix it well
- Add Ginger powder, Ganthoda (Long pepper powder) and cardamom powder
- Then add chopped walnuts, chopped almonds and dry coconut
- Mix everything well till it thickens
- Garnish with chopped almonds and let it cool
- Store it in refrigerator for 1 month
