Mini Beet and Spinach Uttapam

As we are getting ready to go back to school ,I wanted to share some of my quick and easy recipes. I make Uttapams often and these beautiful looking Uttapams are going to be loved by your kids. They will not notice it has vegetable and love the quick and easy bite. I like to make them for breakfast and school lunch box. Checkout the recipe below and dont forget to save and share

Ingredients
  

  • 1 cup semolina fine sooji
  • A tablespoon yogurt
  • 1/2 cup water
  • 1/4 cup shredded beets
  • 1/4 cup chopped spinach
  • Salt as needed
  • 1 green chili optional
  • 2 tablespoon oil to cook

Instructions
 

  • Mix everything except oil and whisk it together
  • Check consistency and add more water if needed to form thick batter
  • Heat mini uttapam pan on medium heat
  • Pour the batter once pan is hot
  • Cook on both sides using oil
  • Serve with coconut chutney
