
Mini Beet and Spinach Uttapam
As we are getting ready to go back to school ,I wanted to share some of my quick and easy recipes. I make Uttapams often and these beautiful looking Uttapams are going to be loved by your kids. They will not notice it has vegetable and love the quick and easy bite. I like to make them for breakfast and school lunch box. Checkout the recipe below and dont forget to save and share
Ingredients
- 1 cup semolina fine sooji
- A tablespoon yogurt
- 1/2 cup water
- 1/4 cup shredded beets
- 1/4 cup chopped spinach
- Salt as needed
- 1 green chili optional
- 2 tablespoon oil to cook
Instructions
- Mix everything except oil and whisk it together
- Check consistency and add more water if needed to form thick batter
- Heat mini uttapam pan on medium heat
- Pour the batter once pan is hot
- Cook on both sides using oil
- Serve with coconut chutney
