Masala Veggie Kebabs

The best way to eat rainbow vegetables other than a salad is by grilling them on skewers. You will love this recipe for Veggie Kebabs as the marination adds right amount of spice and flavors to the veggies and all you need to do is grill them to perfection. The Memorial Day weekend is all about grilling and eating good food and these kebabs will be a crowd pleaser. The marination comes together in no time and is completely vegan.

Ingredients
  

Marination

  • 2 tsp kasoori methi
  • 1/2 tsp amchoor powder raw mango powder
  • 1/4 tsp chaat masala
  • 2 tsp kashmiri chili powder
  • 1 tsp ginger garlic paste
  • 2 teaspoon oil
  • salt as needed
  • 1/2 tsp garam masala

Kebabs

  • 1/2 yellow bell peppers cut into square shapes
  • 1/2 red bell peppers cut into square shapes
  • 1/2 green bell peppers cut into square shapes
  • 1/4 onions cut in to square shapes
  • 6-8 slices zucchini
  • 6-8 button mushrooms
  • 4-6 skewers soaked in water if wooden
  • 1-2 tbsp lime juice to squeeze on top

Instructions
 

  • Mix all the ingredients for the marination in one bowl
  • Assemble the skewers and then roll the skewers in marination
  • Grill the veggies till completely cooked in all sides using additional oil as needed
  • Squeeze lime juice on top and enjoy
