Born and raised in Gujarati family, we tried to save every little drop of oil or peels of vegetable that are edible. My grandmother would use dudhi ni chal, Keda ni chaal and many more wasted food to make delicious meals. It would satisfy her that a waste was saved and also the fact that it was turned into something super delicious. Next time you get Dudhi or Lauki you must try this sambharo
Dudhi nu Chaal no Sambharo
Sambharo in Gujarati means pickled salad. It is usually made with hot tempering oil along with mustard seeds and turmeric powder and some chilies. You are going to love this simple and easy recipe for Dudhi ni Chaal no Sambharo that is easy to make and tastes so delicious especially when paired along with Thepla, khakra or Khichdi. Ingredients
- 1 cup finely chopped dudhi peel
- 1/4 tsp asafetida powder
- 1/2 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/4 cup medium spicy green chili finely chopped
- 1/2 tsp lime juice
- Salt as needed
- 1 and 1/2 tsp olive oil
Instructions
- Wash Dudhi peel and finely chop it into thin strips
- Finely chop medium spicy green chili
- Heat oil in a pan
- Add mustard seeds and asafetida powder
- Once it sizzles add dudhi peel
- Now add salt and turmeric powder and mix it
- After 2-3 minutes turn off the heat and squeeze lime juice and mix
- It stores well in refrigerator for 2 weeks
- Enjoy it with khakra, Khichdi or thepla
