Chutney & Cheese Peppers

I love quick and easy appetizers and if they include veggies, its a win win. I am obsessed with mini sweet peppers, I always have a bag in my refrigerator. They are perfect for snacking, I usually pair them with hummus, salads and curries.
These mini peppers when stuffed with Indian chutney and cheese, they are match made in heaven. The cheese when baked becomes gooeyy and the pepers soften. The chutney is the star of this dish as it adds an amazing kick. The combination is ultimate and tastes so delicious. My son had 4 peices and he had no idea that he was eating peppers.
You can serve these for appetizers or snack. The chutney can be made ahead of time and you wont believe it only took me 10 minutes to assemble these.

Ingredients
  

  • 1 cup whipped cream cheese
  • 8 colorful mini sweet peppers
  • 1/2 cup bread crumbs
  • Salt as needed
  • 1 tsp black pepper powder
  • 1 tablespoon chopped cilantro
  • 1 tablespoon olive oil

Cilantro-Mint Chutney

  • 1/2 cup chopped cilantro
  • 5-6 green chilies
  • Salt as needed
  • 1/4 tsp cumin seeds
  • 1 tsp lime juice
  • 1/4 cup mint leaves
  • 1/2 tsp black salt
  • 1 ice cube

Instructions
 

  • Grind the chutney into a fine paste using cilantro, mint, chilies, cumin seeds, black salt and salt
  • Whisk the cream cheese
  • Add chutney to the cream cheese
  • Add salt and black pepper powder
  • Whisk the chutney and cheese mixture together
  • Cut the Peppers in 1/2 and remove seeds
  • Fill the peppers with 1 tsp of cream cheese filling
  • Preheat the oven to 350 degrees
  • Dip the cheese side of peppers in breadcrumbs and place on a baking tray
  • Spray oil over the peppers
  • Bake the peppers for 7-8 minutes and broil it for 2 minutes ( if you want it softer, bake for longer)
  • Remove from the oven and sprinkle chopped cilantro and serve immediately
