
Black Bean Avocado Toast
You have to try this Mexican spin on traditional Avocado Toast. This recipe works as a good option for breakfast, brunch, lunch, snack and dinner. It is also a great idea to repurpose those left over beans. The pickled onions adds the perfect balance to this toast. I promise you will love this recipe and this was 100% approved by hubby.
Ingredients
- 1 cup black beans rinsed and cooked
- salt as needed
- 1/2 cup onions thinly sliced
- 1/2 cup vinegar
- 1/2 cup mexican blend cheese
- 2 slices of bread
- 1/2 tsp black pepper powder
- 1 avocado sliced
- 1 tablespoon taco seasoning
- 1 tablespoon tomato paste
- 1 tsp olive oil
- 1 tablespoon chopped cilantro
- 1 or 2 lime wedges
Instructions
- Slice the onions and leave it in vinegar for few hours
- Mash the black beans
- In a pan on medium heat, add oil, black beans, tomato paste and taco seasoning and cook till it thickens
- Toast slices of bread in an oven or toaster
- Once toasted, remove it from oven
- Add black beans and shredded cheese on the toast
- Broil the toast for 5 minutes at 400 degrees Fahrenheit or till cheese completely melts
- Remove the toast from oven, add some sliced pickled onions
- Add avocado slices
- Top with more sliced pickled onions
- Sprinkle black pepper and garnish with chopped cilantro
