Vegetable & Paneer Bombs

Vegetable and Paneer Bombs is a fun an easy recipe that will lighten up your day. My son gets tired of getting same things in his lunch box and hence these bombs got invented. I made them in the morning and it took me just took me 20 minutes to make them.
The combination of the two comes together so well, paneer keeps the softness from inside and veggies help to keep the crisp from outside. You cannot just only eat one. You can serve this for game day snack, school lunch, appetizer for a meal or an evening snack, I promise you will love it.

Ingredients
  

  • 1 cup boiled potatoes
  • 1/4 cup finely chopped cilantro
  • 1/2 cup paneer shredded
  • 1/2 cup mixed veggies finely chopped I used broccoli and carrots
  • Salt as needed
  • 1 tsp raw mango powder
  • 1 tsp red chili powder or 1/2 tsp chopped green chilies adjust as needed
  • 3 tablespoon olive oil

Instructions
 

  • Mash the potatoes and mix shredded paneer and finely chopped veggies and cilantro
  • Add salt, raw mango powder and red chili powder or green chilies
  • Form ball shape rounds
  • Use paniyaram or Aebleskiver pan to fry them using oil
  • You can also air fry them for 10 - 15 minutes at 400 degree Fahrenheit till they are brown on all sides (apply oil on all sides)
  • Serve with ketchup or chutney
