Introduction
Lets switch up your breakfast with these Gluten free Vegetable & Oatmeal Waffles. These waffles are healthy and comforting. They are perfect for kids or toddlers and can be instantly made. My son gets tired of eating Oatmeal every week so I like to switch up his Oatmeal with these waffles. They contain vegetables and they are family favorite.

Vegetable & Oatmeal Waffles | Gluten free Indian Oats Waffles
If you are looking for a Gluten free version of Indian Waffles then you have landed on the right page. Vegetable & Oatmeal Waffles are quickly made and they turn out so yum. Whenever my family gets tired of usual oatmeal, I switch it up with these waffles. I also like the fact it contains veggies to make it a filling meal. You can eat them for breakfast, lunch, snack or dinner. These waffles turn out soft unlike most of my waffle recipes and I like it that way as I can pack them for school lunches. You can make these ahead of time and reheat them at a later time as well. I am sure you will love this easy Oatmeal recipe as much as we do.
Ingredients
- 1 cup instant gluten free oats
- 1/2 tsp baking powder
- Salt as needed
- 3/4 cup water
- 1/4 cup green peas frozen or semi cooked
- 1/4 cup diced carrots frozen or semi cooked
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1 tsp ginger garlic paste
- 1 green chili finely chopped
- 1 tablespoon chopped cilantro
- 2 tablespoon olive oil to cook the waffles
- 1/2 cup thin sev to garnish
- 2 tablespoon sweet chutney to serve
Instructions
- If you are using fresh peas and carrots, cook both in water till they are semi cooked. If using frozen peas and carrots then wash in hot water and drain them
- Take the instant oats and grind it into a powder and make a flour
- In a bowl, mix together oats flour, salt, red chili powder and turmeric powder
- Add ginger and garlic paste, finely chopped green chilies, veggies and chopped cilantro
- Add the water and whisk the mixture into a thick batter
- Heat the waffle maker and grease it with oil
- Right before making the waffles, add the baking soda to the batter and little bit of water and whisk it till bubbles form
- Pour the batter in the waffle maker and close the top and let it cook
- Once the waffle is cooked on both sides, you can serve the waffles along with thin sev and sweet chutney

When do the add the carrots & peas? Do you grind them?
You can add them right before adding the water. You can cook them so they are semi soft but don’t need to grind them
I followed the recipe exactly. They turned out extremely dry. I added some more water and oil but didn’t help. Then heaped on a lot of chutney which wasn’t fun to eat. Any suggestions?
