Turia Dhokli nu Shak

When I got married, I learned so many new dishes from my mother in law. Her way of cooking was completely different from my mom and I loved learning new recipes from her. One day she made Turia Dhokli nu Shak that is also called Ridge Gourd and I was blown away how delicious it tasted. The softness of Dhokli in every bite and the delicous sweetness from Turia came together so well. I was in love with combination and I knew I had to learn this recipe. After making it several times, I am sharing her quick recipe that I promise you will love.

Ingredients
  

  • 2 cups chopped Turia or Ridgegourd
  • 1 & 1/2 tbsp olive oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 3 cups water
  • Salt as needed
  • 1&1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp asafetida powder
  • 1 tsp cumin coriander powder
  • 2 tsp sugar
  • 1/4 cup chopped cilantro

Dhokli

  • 1/2 cup chopped cilantro
  • 1 cup chickpea flour
  • Salt as needed
  • 1&1/2 tsp red chili powder
  • 1/2 tsp cumin coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp asafetida powder
  • 2 tsp sugar
  • 1 tsp olive oil
  • 1 tsp lime juice
  • 1 pinch baking soda
  • 1/4 cup water or as needed

Instructions
 

  • Chop Turia in chunks
  • In a pan heat oil and sprinkle cumin and mustard seeds, add turia, salt and water and cover and cook for 15 minutes or till turia is 1/2 cooked
  • In a bowl combine everything for the Dhokli and form small round dhokli using little water
  • Once the turia is 1/2 cooked add Dhokli and cover and cook 7-8 minutes
  • Open it and check to make sure Dhokli is cooked, add sugar, red chili powder, cumin coriander powder, asafetida powder and mix it well
  • Cook for few minutes till everything is mixed well and raw smell from spice is gone
  • Sprinkle with chopped cilantro and enjoy with Rotli of rice
