Paneer Bhurji Cones
Paneer Bhurji Cones should be part of you next Diwali or Holiday party. You can make these fusion cones using Kawan Parathas or Puff Pastry. They turn out flakey, crunchy and have lots of flavor. I love this dish as it is high in protein and contains lots of veggies. You can serve it as an appetizer for your parties or a late afternoon snack with chai. If you have Paneer Bhurji prepped ahead of time you can also make these cones for breakfast next day. Once you have the Bhurji ready this dish is so easy to make. My son loves it and I can’t wait to send this to school lunches.

Paneer Bhurji Cones
Ingredients
- 2 cups Shredded Paneer
- 4 Kawan parathas or Puff Pastry sheets
- Salt as needed
- 1 cup Tomatoes
- 1 tablespoon olive oil
- 1/2 cup Onions
- 1/4 cup Bell peppers
- 1 tablespoon chopped garlic
- 1/2 tsp chopped ginger
- 1 tablespoon chopped green chilies
- 1 tablespoon kasoori methi
- 1 tsp red chili powder
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1 tsp Amchoor powder Raw Mango Powder
- 1 tsp Pav bhaji masala
- 1/4 cup chopped cilantro
- 1/4 tsp Nigella seeds or Kalonji
- 1/4 cup water
- 1/4 Ketchup to serve
Instructions
- Take the Puff Pastry or Kawan Parathas out of the freezer and leave it inside the fridge overnight or on your countertop for few hours
- Chop tomatoes, onions, bell peppers, garlic, green chilies and ginger and have it ready
- Shred the paneer and have it ready
- In a wide pan heat oil on medium heat
- Add cumin seeds and let it sizzle, now add chopped onions, green chilies, bell peppers, ginger and garlic and cook for few minutes
- Once it softens add red chili powder, turmeric powder, salt, amchoor powder, pav bhaji masala and mix it well
- Add tomatoes and cook them for few minutes and mash them a little
- Once the oil is released add the shredded paneer and mix everything well and turn off the heat after few minutes
- Sprinkle Kasoori methi and chopped cilantro and mix it
- Preheat the oven at 350 degrees Faranheit
- Take out the thawed Kawan paratha or puff pastry and cut into half
- Place the Bhurji mixture in the middle of the paratha
- Using some water lift the parathas and roll the parathas to form a cone
- Place them on a baking sheet and sprinkle Kalonji on them
- Bake them at 350 degrees Faranheit for 25 minutes or till they are medium brown on all sides
- Serve them along with ketchup
