As we are getting close to winter season, we are going to be eating lot of greens. Kale was one green that was introduced to me when I moved to States. To be honest it took me a while to get over the taste of Kale. Once I knew how to cook Kale, I loved it. I often make salads using Kale or make sautéed kale. The Gujarati in me had to use Kale and make Theplas using it. Everyone in family loved how these Thepla turned out and it was a good way to include Kale in our diet.
Kale is rich in potassium and Vitamin A, K, B6 and C. It is low in calories and carbs as well. It is also good for diabetic and people with high cholesterol.

Kale na Thepla
Ingredients
- 1 cup chopped Kale
- 1 and 1/2 cup whole wheat flour
- 1 tsp red chili powder or as needed
- Salt as needed
- 1 tablespoon yogurt
- 1/2 tsp turmeric powder
- 1 pinch asafetida powder hing powder
- 1/4 cup warm water
- 1 tablespoon green chili paste optional
- 1 tsp sesame seeds optional
- 1 tsp oil to knead the dough
- 1/4 cup of dry whole wheat flour to roll Theplas
- 1/2 cup oil to cook Theplas
Instructions
- Chop Kale and wash it
- Mix whole wheat flour, chopped kale, yogurt, salt, red chili powder, turmeric, asafetida powder and sesame seeds
- Add green chili pate
- Mix it well and form a firm dough using 1/4 cup water if needed
- Use oil to knead the dough
- Roll the theplas either using rolling pin and dry flour
- Cook the theplas applying generous amount of oil on both sides on a flat pan on medium to high heat
- Stack them together
- You can store them in an airtight container or in the refrigerator once they cool off
- Enjoy them with yogurt or green chilies
