
Dudhi Palak Thepla
Dudhi is my son's favorite vegetable and we make so many dishes with it. We always have a Dudhi or Lauki in our fridge. I am sharing with you a filling and nutritious idea for thepla. The combination of Dudhi and Palak works really well together and these theplas will give you a wholesome feeling. It does not take long to make these and perfect way to hide the veggies. Eat them for breakfast, lunch or dinner and I promise you will love these.
Ingredients
- 2 cups whole wheat flour
- salt as needed
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp sesame seeds
- 1 tablespoon yogurt
- 1/2 cup chopped spinach
- 1/2 cup shredded dudhi or lauki, water squeezed out
- 3-4 tablespoon olive oil to cook theplas
- water as needed to combine the dough
Instructions
- Shred Dudhi or Lauki, remove seeds and sprinkle sat and leave it for 10-15 minutes
- After 15 minutes, squeeze the water out of dudhi using palm of your hands
- In a bowl, add flour, spices, chopped spinach, yogurt, salt and shredded dudhi
- Knead into a hard dough and add water only if needed to combine the dough
- Form 7-8 equal portions
- Using light pressure roll the dough into a disc shape
- Cook the Theplas applying generous amount of oil on both sides
- Store the thepla in an airtight container or in refrigerator once it cools
- Enjoy them with yogurt and athela marcha
