Airfried Methi na Muthiya has been one of our favorite snacks along with chai or coffee. We always make extra to add them to Undhiyu or other Gujarati shaaks. I liked Muthiya in all forms, steamed, fried and Air Fried. Dudhi na Muthiya that are steamed are one of my favorites. This Gujarati snack are so addictive.
What is Muthiya?
Muthiya is derived from the word “Muthi” which means fist. They are made using the fist by gripping them. Muthiya derived from Gujarat where it is served on streets, as a snack in homes or as a side dish. This snack is made with chickpea flour, fenugreek leaves and other ingredients. Leftover Muthiyas are added to vegetables to add flavor and thickness. The steamed version can be made using same recipe. It is healthier as there is less use of oil. If you want them to last for longer then the fried version is better. You can choose to deep fry them but I liked how they turned out in Air Fryer.
Recipe
Airfried Methi na Muthiya
Ingredients
- 1 and 1/2 cup chickpea flour
- Salt as needed
- 1/4 cup whole wheat flour
- 1 tsp sugar
- 1 and 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/4 tsp asafetida powder
- 1/2 tsp garam masala
- 3/4 cup Methi leaves
- 1/2 tsp amchoor powder
- 1/2 cup water or as needed
- 2 tablespoon oil
- 1/2 tsp sesame seeds
- 1/2 tsp eno
- Oil spray as needed
Instructions
- Thoroughly wash the Methi leaves
- Chop the Methi leaves and squeeze out the water
- In a bowl add Chickpea flour and whole wheat flour and add methi leaves to it
- Add sugar, salt, red chili powder, turmeric powder, asafetida powder, garam masala and amchoor powder
- Add oil and sesame seeds
- Add eno and water and mix it all together and form a dough that is not too firm and not too soft
- Rub oil on your hands
- Using your hands roll them into an oval shape dumpling that is long
- Preheat Airfryer to 400 degrees Fahrenheit
- Place the Muthiyas in an Air Fryer with parchment paper
- Spray oil and Air Fry them for 15 minutes, rotating them halfway till they are crispy on all sides
- Once they are done, remove them and let them cool for few minutes
- Enjoy them as snack along with chutney
- Alternatively you can choose to steam the muthiya instead of Air Frying them
- You can store the Air Fried Muthiya in an air tight container for 1 week
- You can use the same Muthiyas in Undhiyu or other vegetables
