Thoroughly wash the Methi leaves
Chop the Methi leaves and squeeze out the water
In a bowl add Chickpea flour and whole wheat flour and add methi leaves to it
Add sugar, salt, red chili powder, turmeric powder, asafetida powder, garam masala and amchoor powder
Add oil and sesame seeds
Add eno and water and mix it all together and form a dough that is not too firm and not too soft
Rub oil on your hands
Using your hands roll them into an oval shape dumpling that is long
Preheat Airfryer to 400 degrees Fahrenheit
Place the Muthiyas in an Air Fryer with parchment paper
Spray oil and Air Fry them for 15 minutes, rotating them halfway till they are crispy on all sides
Once they are done, remove them and let them cool for few minutes
Enjoy them as snack along with chutney
Alternatively you can choose to steam the muthiya instead of Air Frying them
You can store the Air Fried Muthiya in an air tight container for 1 week
You can use the same Muthiyas in Undhiyu or other vegetables
