Sometimes a simple Cheese & Corn Toasty does the trick when you are having a busy day. I like to make these during winter times because who doesn’t love melted cheese in between the breads. The balance of flavors from the sweet corn and salty cheese is to die for. It’s crunchy from outside and so gooey from inside. The sandwich chutney adds the right amount of spice. Pair it with coffee, tea or hot soup. I am sure you are going to love these.
Cheese & Corn Toasty
When we were growing up, we got tired of eating normal Sandwich. Those days we were hyped with the sweet corn as it was not readily available in India. We would sweet corn Toasty in the non electric Toasty maker. These sandwiches were made during breakfast time and late afternoon snacks. We loved how these turned out as the sweet corn and bread are match made in heaven. Each bite would have melted cheese along with corn in a crusty bread. They are simple and can be made so easily. Checkout the recipe below that I am sure you will love.
Ingredients
- 1 cup frozen corn
- 1 cup shredded mozzarella cheese
- 1 tablespoon cilantro chili chutney
- Salt as needed
- 1/4 cup chopped cilantro
- 1/4 cup chopped green Bell Peppers
- 1 tsp black salt
- 1/2 tsp black pepper powder
- 4 tablespoon Amul butter
- 8 slices of bread small size
Instructions
- Wash the frozen corn in water and pat them dry
- Chop peppers and cilantro and have it ready
- In a bowl mix together corn, bell peppers, corn, chopped cilantro
- Add black salt, black pepper powder and salt only if needed
- Now add the green chutney and modify as per desired spicy taste
- Add the shredded mozzarella cheese
- Mix everything well and check the salt level
- On 2 slices of bread apply butter on one side
- Layer 2 tablespoon of cheese and corn mixture on one slice of bread
- Form a sandwich using the other bread and place the bread on top, butter side faced down
- Heat the sandwich maker and grease it with butter on both plates
- Toast the sandwich in a sandwich maker, grill or you can use a pan as well
- Toast until the cheese melts and brown on both sides
- Serve it along with ketchup and enjoy the crunch
