n a bowl take chickpea flour, red chili powder, turmeric powder, cumin coriander powder, salt, sugar, garam masala powder and mix it together
Then add oil to dry masala and using hands mix it till it’s coated with oil
Wash and dry gunda using a kitchen towel
Cut the top portion of gunda and using palm, press so the seed comes out, this process can be little sticky so you may use to gloves
Once all gunda are deseeded place them a plate
Stuff the gundas with dry Masalo and leave some Masalo to add in the end
In a pan heat oil on medium heat add cumin seeds and let it sizzle
Add the the stuffed gundas to the oil and let it sizzle and cook on low heat
Cover it and let them cook till they are charred and softened
In between keep flipping and cooking them
Add salt as needed
Once they are cooked from all sides, add the remaining masala to it and cook for few more minutes
Turn off the heat
Sprinkle chopped cilantro
Serve them along with puri or rotli and they pair well with aamras and rotla
