Kakdi Nu Shak | Cucumber Sabzi

Kakdi nu Shaak turns out so crunchy. It can be made in less than 10 minutes and tastes so delicious. The cucumbers are always available in our pantry and this shaak comes in handy whenever we run out of veggies. Kakdi nu Shaak is also called Kheere ki Sabzi in Hindi. The taste of this shaak is spicy, tangy and sweet. You can pair this shak with Rotli, Thepla, Bhakri or Parathas. Checkout quick and easy recipe below.

Ingredients
  

  • 2 large Cucumbers diced into pieces
  • Salt as needed
  • 1 tablespoon olive oil
  • 1/2 tsp mustard seeds
  • 1/4 tsp asafetida powder
  • 1/2 tsp cumin coriander powder
  • 1/4 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tablespoon lime juice
  • 1/4 cup chopped cilantro

Instructions
 

  • Wash and dice cucumbers into big pieces, can remove the peel if desired
  • In a flat pan heat oil on medium heat
  • Once the oil is hot, add the mustard seeds and asafetida powder and let it sizzle
  • Once the mustard seeds sizzle, add the cucumber pieces and mix it well
  • Add salt, red chili powder, turmeric powder and cumin corriander powder and mix it well and let the water evaporate
  • Drizzle lime juice and Garnish it with chopped cilantro
  • Serve hot along with Rotli, Thepla, Bhakri or Parathas
