Saragva nu Shak / Drumstick Curry
Drumstick or Saragva is also called Moringa. It generally grows in subtropical region like South Asia. They are used to make sambhar or vegetable or curries. It is very difficult to find the fresh Drumsticks hence I use frozen version. I usually find them fresh during summer season. I am sharing a recipe of Chickpea flour (Besan) and Saragva nu shak that my mom made very often and it made a perfect hearty meal

- 2 cups drumsticks cut into pieces and boiled
- 1 cup yogurt
- 1/2 tsp green chili paste
- Salt as needed
- 1 and 1/2 cup water
- 1 cup chick pea flour
- 3/4 tsp turmeric powder
- 1 tablespoon olive oil
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/4 tsp asafetida powder
- 1 tablespoon fresh lime juice if yogurt not sour
- 1/4 cup chopped cilantro
Boil 3 cups of water
Add the the drumsticks in the water along with salt and let it cook till it softens
Meanwhile in a bowl whisk together chickpea flour, yogurt, 1 and 1/2 cup of water, green chili paste and turmeric powder
Drain the water from the drumsticks
Heat oil in a pan on medium heat
Add cumin seeds, mustard seeds, asafetida powder and let it sizzle
Once it sizzles, add the yogurt chick pea flour mixture, salt and lower the heat
Using a spatula or spoon keep on mixing till it thickens
Squeeze fresh lime juice
In 10 minutes it will thicken, add the drumsticks and mix it well. Turn the heat off.
Sprinkle chopped cilantro
Serve it along with hot chapatis or rice
