Aloo Toast

Potatoes are my go to for snacks or breakfast. Potatoes and Bread are match made in heaven. I am sharing an easy recipe that will hit your spicy and tangy cravings. I love to enjoy these Aloo Toast with garlic chutney. Do not confuse this with Vada Pav filling as the flavors are little different. I am sure you are going to love how these turn out. The crunchy form the sourdough bread and the flavorful potato filling will make you want to eat more. I like to make the potato filling ahead of time when I am entertaining.

Ingredients
  

  • 3 medium size boiled potatoes
  • 2 sourdough sliced bread
  • Salt as needed
  • 1/2 tsp turmeric powder
  • 1 tsp chopped green chilies
  • 6- curry leaves
  • 1/2 cup chopped cilantro
  • 1 tsp mustard seeds
  • 1 tsp olive oil
  • 1 tsp butter
  • 1/2 tsp dry garlic chutney
  • 1/2 tsp lime juice

Instructions
 

  • Boil potatoes and add add salt once the peels are removed
  • Heat oil on medium heat and add mustard seeds, green chilies and curry leaves
  • Once it sizzles add turmeric powder and turn off the heat
  • Pour the tadka over the potatoes and squeeze fresh lime juice and sprinkle chopped cilantro
  • Mash the potatoes and mix it with the tadka, cilantro and lime juice
  • Toast a slice of bread applying butter on both sides
  • Once the bread is toasted well, spoon the potato mixture and press it down
  • Sprinkle dry garlic chutney and garnish with chopped cilantro
  • Serve it with coffee or tea
