Rosti Waffles

You all showed so much love to my Sabudana Waffles, so here is another waffle idea to add on to my waffle series. Rosti Waffles. These can be made during Navratri or Shravan Mahino. It’s simple and yes turns out so crunchy. I love potatoes be it weekends brunches or evening snacks and when you can make something quick then it’s a win win. Here is my twist to traditional Potato Rostis that originated in Switzerland. Checkout the recipe for Chili and Cilantro Potato Rosti Waffles.

Ingredients
  

  • 1/4 cup unsalted butter
  • Salt as needed
  • 1/4 cup chopped cilantro
  • 1 tablespoon chopped green chili
  • 2 cups shredded Yukon gold potatoes 3-4 potatoes
  • 1/4 cup sour cream to serve
  • 1 tsp scallions to garnish the sour cream optional

Instructions
 

  • Wash and peel the potatoes
  • Grate the potatoes and use a kitchen towel to squeeze the water out of potatoes
  • In a bowl mix cilantro, green chilies, salt and grated potatoes
  • Heat the waffle maker and place 1/2 tsp butter on the bottom
  • Use your hands to spread even layer of grated potato mixture
  • Place 1/2 tsp of butter on top
  • Close and let the waffles cook
  • Open the waffle maker and flip the waffle after 5 minutes and cook it again
  • Once it is brown on both sides garnish with cilantro
  • Serve with sour cream and garnish with scallions (optional) or with ketchup
  • Enjoy with you morning coffee, as a side or during snack time
