Mumbai Masala Pav

My husband is a huge fan of Masala Pav and when we started dating he told me this is one dish I will need to perfect to make him happy. My husband when growing up always visited this one restaurant for Masala Pav in Ghatkopar, Mumbai. He even took me to this restaurant to try and understand the flavors of the Masala Pav so I can reciprocate the same in my kitchen. The restaurant unfortunately closed down but his aunt who lived close to the restaurant learned how to make it. As soon as I discovered that, I had to learn the recipe. Over the years I made little tweaks to bring back the same taste and now I have perfected this recipe and here I am sharing this recipe with all of you.
This turns out exactly like the restaurant. The chutney cooked with veggies tastes so delicious with the Pav and makes my husband nostalgic every time I make it. Pair it with Thums up and tell me if it reminds you of Mumbai.

Ingredients
  

  • 4 tbsp amul butter
  • 1/2 cup red onions diced
  • 1/2 cup tomatoes diced
  • 1 clove garlic
  • 4 tbsp masala pav chutney
  • 1 cup cilantro chopped
  • 2 tsp pav bhaji masala
  • salt as needed
  • 2 tsp lime juice

Instructions
 

  • In a pan add 1 tablespoon of amul butter
  • Add 1/4th cup onions and 1/4th cup tomatoes and sauté for few minutes
  • Add 1/4th cup of cilantro and shred 1/2 clove of garlic
  • Mix everything and cook for few minutes
  • Add 1 tsp of Pav Bhaji masala and 2 tablespoon of masala pav chutney
  • Use the masher to mash everything well
  • Add lime juice and 1 tablespoon of butter
  • Dip the bread in the Masala and spread it on both sides
  • Garnish with more cilantro and serve immediately
