Black Bean Avocado Toast
You have to try this Mexican spin on traditional Avocado Toast. This recipe works as a good option for breakfast, brunch, lunch, snack and dinner. It is also a great idea to repurpose those left over beans. The pickled onions adds the perfect balance to this toast. I promise you will love this recipe and this was 100% approved by hubby.

- 1 cup black beans rinsed and cooked
- salt as needed
- 1/2 cup onions thinly sliced
- 1/2 cup vinegar
- 1/2 cup mexican blend cheese
- 2 slices of bread
- 1/2 tsp black pepper powder
- 1 avocado sliced
- 1 tablespoon taco seasoning
- 1 tablespoon tomato paste
- 1 tsp olive oil
- 1 tablespoon chopped cilantro
- 1 or 2 lime wedges
Slice the onions and leave it in vinegar for few hours
Mash the black beans
In a pan on medium heat, add oil, black beans, tomato paste and taco seasoning and cook till it thickens
Toast slices of bread in an oven or toaster
Once toasted, remove it from oven
Add black beans and shredded cheese on the toast
Broil the toast for 5 minutes at 400 degrees Fahrenheit or till cheese completely melts
Remove the toast from oven, add some sliced pickled onions
Add avocado slices
Top with more sliced pickled onions
Sprinkle black pepper and garnish with chopped cilantro
