Black Bean Avocado Toast

You have to try this Mexican spin on traditional Avocado Toast. This recipe works as a good option for breakfast, brunch, lunch, snack and dinner. It is also a great idea to repurpose those left over beans. The pickled onions adds the perfect balance to this toast. I promise you will love this recipe and this was 100% approved by hubby.

Ingredients
  

  • 1 cup black beans rinsed and cooked
  • salt as needed
  • 1/2 cup onions thinly sliced
  • 1/2 cup vinegar
  • 1/2 cup mexican blend cheese
  • 2 slices of bread
  • 1/2 tsp black pepper powder
  • 1 avocado sliced
  • 1 tablespoon taco seasoning
  • 1 tablespoon tomato paste
  • 1 tsp olive oil
  • 1 tablespoon chopped cilantro
  • 1 or 2 lime wedges

Instructions
 

  • Slice the onions and leave it in vinegar for few hours
  • Mash the black beans
  • In a pan on medium heat, add oil, black beans, tomato paste and taco seasoning and cook till it thickens
  • Toast slices of bread in an oven or toaster
  • Once toasted, remove it from oven
  • Add black beans and shredded cheese on the toast
  • Broil the toast for 5 minutes at 400 degrees Fahrenheit or till cheese completely melts
  • Remove the toast from oven, add some sliced pickled onions
  • Add avocado slices
  • Top with more sliced pickled onions
  • Sprinkle black pepper and garnish with chopped cilantro
