Vegetarian Fajitas

We need to have Fajitas Tuesdays. Lots of veggies that brings great flavors to this dish paired with warm tortillas and beans tastes so delicious and comforting. I also find this very healthy and perfect replacement of gujarati full course meal.

Ingredients
  

  • 1 tsp olive oil
  • 1 cup mushrooms sliced
  • 1 cup sliced onions
  • 1/2 cup carrots
  • 1/4 cup sliced jalapeños
  • 1 cup bell peppers sliced
  • 1/2 cup cilantro
  • 1/2 tsp cumin powder
  • 3 tsp fajita mix or taco seasoning
  • salt as needed
  • 1/2 tsp mexican oregano
  • 3 cloves of garlic
  • black beans soaked and boiled with salt
  • store bought salsa 4-6 tablespoon
  • 6-8 to rtillas

Instructions
 

  • Place the tortillas in a foil and put in an oven at 250 degree Fahrenheit for 10 minutes
  • In a wide skillet, heat oil at medium heat, add the cumin powder, onions and garlic and sauté for few minutes, add all the other veggies and salt and let it sauté for 5-10 minutes till they soften. Now add oregano, salt, fajita mix and cook the veggies and mix it well. Once the veggies are cooked well turn off the heat and serve immediately with warm tortillas and guacamole.
  • Assemble the fajitas by placing beans and veggies on tortilla and topping with guacamole and salsa. Can add hot sauce if needed
