Mini Beet and Spinach Uttapam
As we are getting ready to go back to school ,I wanted to share some of my quick and easy recipes. I make Uttapams often and these beautiful looking Uttapams are going to be loved by your kids. They will not notice it has vegetable and love the quick and easy bite. I like to make them for breakfast and school lunch box. Checkout the recipe below and dont forget to save and share

Cuisine homemade, Indian
- 1 cup semolina fine sooji
- A tablespoon yogurt
- 1/2 cup water
- 1/4 cup shredded beets
- 1/4 cup chopped spinach
- Salt as needed
- 1 green chili optional
- 2 tablespoon oil to cook
Mix everything except oil and whisk it together
Check consistency and add more water if needed to form thick batter
Heat mini uttapam pan on medium heat
Pour the batter once pan is hot
Cook on both sides using oil
Serve with coconut chutney
