Tindora Tameta nu Shak

Tindora or Ivy gourd is a famous Indian vegetable. I bring a batch of this every time I visit Indian grocery store. This vegetable brings back a lot of childhood memories. My mom made this Shak or vegetable with Gujarati Dal, Rotli and rice and it would be the most comforting meal. My brother and I grew up loving how my mom made the shak and just how every kid has their mom’s favorite, this vegetable became our favorite food. I am sharing my mom’s recipe that is close to my heart and brings a lot of comfort when I make this. Hope you will enjoy this as much as we do.

Ingredients
  

  • 2 cups sliced Tindora
  • 1/2 cup chopped tomatoes
  • 1 tablespoon olive oil
  • Salt as needed
  • 1 tsp red chili powder
  • 1 and 1/2 tsp cumin- cilantro powder
  • 1/2 tsp turmeric powder
  • 1/2 - 1 cup water for cooking
  • 1 tsp sugar optional
  • 1/4 tsp asafetida powder
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 cup chopped cilantro

Instructions
 

  • Slice Tindora and wash and let it air dry for 20 minutes
  • Heat oil in a pan, add cumin seeds, mustard seeds and asafetida powder
  • Once it sizzles, add Tindora
  • Add red chili powder, turmeric powder, salt, sugar and cumin-cilantro powder and mix it
  • Add little water and cover and cook for 15 minutes
  • Open the lid and check if cooked, if not add more water and cover and cook for 10 more minutes till it softens
  • Open lid and add tomatoes and let the water evaporate and tomatoes soften for about 5 minutes
  • Sprinkle chopped cilantro and serve hot with chapatis
