Summer Salad

As the temperatures are rising I like to eat light and refreshing food and I think you will be looking  for the same so sharing my recipe for Refreshing Summer Salad. This salad will give you  all the summer vibes. It is sweet and savory and you can totally enjoy this as a meal. I love Farro, if you haven’t tried this grain tastes so nutty and it is a good replacement for rice. The roasted beets and the oranges balance each other off so well and the crunch from Arugula adds the right texture. Hope you will enjoy this salad as much as we do.

Ingredients
  

  • 2 cups Arugula
  • 1 medium size Beet
  • 1 tablespoon olive oil
  • 1/2 cup cooked farro
  • 1/2 cup orange sliced pieces
  • 2 tablespoon mint leaves
  • salt as needed
  • Salt as needed
  • 1/2 tsp crushed black pepper powder
  • 1/2 cup olive oil
  • 1/4 cup fresh lime juice
  • 1 tsp chili flakes
  • 1 tablespoon shredded garlic

Dressing

    Instructions
     

    • Roast the Beets with olive oil and salt in a foil wrap in an oven at 375 degrees for 40 minutes
    • Cook the Farro as per package instructions
    • Lay the Arugula on a Salad serving plate
    • Top it with Roasted Beets and sliced Oranges
    • Layer with cooked Farro
    • Whisk the ingredients of the dressing together and drizzle the dressing over the salad
    • Sprinkle with mint leaves and enjoy this refreshing salad
