Indian Sandwich Chutney

Indian Sandwich will have no taste without its chutney. I learned very quickly that the chutney is the key. If you have the chutney right your sandwich will always taste perfect.
Every time I go back to India I stop by my favorite sandwich wala and tell him to pack me some chutney so I can bring it back to US and relish the same sandwich here. It only lasts me for few months and after that I have to again try to perfect my sandwich chutney to make it taste like the one he packed for me. My chutney recipe is not exactly like my Indian Sandwich wala but it comes pretty close. 
I always used nuts in my chutney but then I switched to using thin sev as it gives the chutney a different taste and texture. It was a game changer and I can send this chutney to my son’s school as it is nut free. The ratios of green chilies to cilantro has been tried and tested several times. I use this chutney only with bread and nothing else as I make a different chutney for other things hence calling this Indian Sandwich Chutney.

Ingredients
  

  • 15 thai green chillies modify to make it less spicy
  • 1 tsp black salt
  • 1/2 tsp salt or as needed
  • 3/4 cup thin sev
  • 3 cups cilantro
  • 3 tablespoon lime juice
  • Ice Water as needed

Instructions
 

  • Wash and soak cilantro and green chillies in water separately
  • Grind the green chillies in a blender
  • Add cilantro and blend it again and add very little water only if needed
  • Add thin Sev, lime juice, black salt and salt and blend everything together
  • Mix it well and store in refrigerator or freezer
