Bombay Vegetable Grilled Sandwich

My Sandwich series cannot be complete without Bombay Vegetable Grilled Sandwich. This sandwich has been closest to my heart as I grew up eating this sandwich on the streets of Bombay.
We always visited our favorite sandwich wala for toast sandwich and one of them was located at Breach Candy, Mumbai. I have watched the guys make this sandwich in front of my eyes so many times and I applaud them for everything they did to make that Sandwich taste like its the best thing in the world. I finally figured out the equation that works to make this sandwich taste exactly like roadside. The assembly of the sandwich and the chutney flavor are the 2 most important things to make this sandwich taste as good as street vendors. I have broken down every step in this recipe and if you follow these steps it will remind you of the original Bombay Sandwich.
We make this sandwich once every 2 weeks for dinner. Its a perfect meal as it has veggies, protein, carbs and fat. The flavors of this sandwich makes me so nostalgic. If you haven't tried this then its a must try.

Ingredients
  

  • 6 slices of bread
  • 1/2 cup cilantro chutney
  • 1/4 cup amul butter
  • 1 boiled potato thinly sliced
  • 8 slices of tomato
  • 8 slices of red onion
  • 1/2 green bell pepper sliced
  • 4 tsp of chaat masala
  • 3 cubes of amul cheese

Instructions
 

  • Slice all the veggies and have it ready before assembling the sandwich
  • Take 3 slices of bread and apply amul butter on each slice on 1 side
  • Apply chutney on all 3 breads on the side with butter
  • Place potatoes on 1 slice of bread and sprinkle 1/4 tsp of chaat masala on it
  • Place green peppers on the potatoes and sprinkle 1/4 tsp of chaat masala
  • Take another slice of bread and place tomato slices on it and sprinkle 1/4 tsp of chaat masala
  • Place onions on the tomatoes and sprinkle 1/4 tsp of chaat masala
  • Shred generous amount of Amul cheese on both slices of bread filled with the veggies
  • Stack one slice over the other and cover with the bread that has no veggies and form a 3 layer sandwich
  • Apply butter on outer sides of the and grill the sandwich
  • Once it turns golden brown on each side, cut and serve the sandwich with more amul cheese shredded over it
  • Repeat the steps for more sandwiches
