I always try to make light meals during the summer that has lots of veggies, protein and is not to heavy or greasy. The combination of paneer and lettuce tastes so good. The soft paneer and crunchy lettuce are match made heaven. To add extra crunch I added shredded carrots, beets and papad chavanu and I was in a food coma. This dish can be served as an appetizer if you are entertaining. You can make the paneer ahead of time and let your guests assemble the cups when they arrive.
