Mix Veg & Paneer Paratha 

Parathas are made once every week at our home. My son loves different kinds parathas or at least I like to believe that. I love the fact that I can hide anything I want him to eat in it. Don't you all moms agree?????
My version of Mixed vegetable and Paneer Paratha has been a huge hit amongst my entire family. It has all the veggies, aloo and lots of paneer. You can easily substitute raw banana to make it Jain or even skip it entirely. This paratha is not vegan as it needs lots of love from Amul butter.

Ingredients
  

For filling

  • 1 medium sized potatoe
  • 1/2 cup green peas
  • 1/2 cup carrots
  • 2 -3 green chillies chopped
  • 1/4 cup onions chopped
  • 1/4 cup cilantro chopped
  • salt as needed
  • 1 tsp olive oil
  • 1 clove garlic shredded
  • 1/2 tsp cumin seeds
  • 1/4 tsp hing powder
  • 1 1/2 tsp amchoor dry mango powder
  • 1 cup paneer shredded

For paratha

  • 2 cups whole wheat flour
  • Salt as needed
  • 1/2 -3/4 cup water to form dough
  • 1/2 tsp oil
  • 2 tablespoon Amul butter

Instructions
 

  • Boil potatoes, carrots and peas and mash them.
  • Heat olive oil on a pan on medium heat and then add cumin seeds. Once it sizzles add hing powder, chopped onions, green chillies, garlic and add little salt and cook for 2 minutes.
  • Add potatoes, carrots, peas, shredded paneer and amchoor powder and mix it well and cook till the water is completely absorbed and you can form it into balls. Turn of the heat and let the mixture cool.
  • Form a paratha dough by using wheat flour, salt, olive and water. Dough should be not too soft and not too hard.
  • Roll the parathas to medium round shape and then place the mixture in middle then seal the parathas and roll it again and then cook the parathas on a flat bottom pan using amul butter.
