Vegetable Quinoa waffles

Vegetable Quinoa Waffles is an easy recipe to follow. The recipe is vegan and you can skip carrots to make it jain. These turn out extremely flavorful and they turn out crunchy in a waffle maker. Checkout quick recipe below

Ingredients
  

  • 3/4 th cup dry quinoa
  • 3/4 th cup bread crumbs
  • 2 cups water
  • 1 cup frozen mixed vegetables
  • Salt as needed
  • 1/2 cup mint leaves
  • 1 tablespoon lime juice
  • 1/2 cup chopped cilantro
  • 1 tsp black salt
  • 8-10 green chilies adjust as per desired spice
  • 2 tablespoon cup Ketchup
  • 2 tablespoon cilantro chili Chutney
  • 3 tablespoon olive oil

Instructions
 

  • Cook the quinoa as per instructions and make sure they are fluffy using a fork
  • Grind green chilies, mint leaves, lime juice and black salt into a coarse paste
  • Take fresh or frozen vegetables and grind them into a coarse mixture and squeeze the water out
  • In a bowl add cooked quinoa, green chili mint paste, vegetable mixture, breadcrumbs, salt and chopped cilantro
  • Mix all the ingredients and form patties and use more bread crumbs as needed for binding
  • Grease the waffle maker with oil
  • Cook the patties in a waffle maker till crispy on both sides. It took me about 15 minutes for 4 waffles in a multi waffle maker
  • Let the waffle air for 5 minutes and serve it along with ketchup or green chutney
  • You can replace burger patty with these or can make a sandwich or add them to salad
